for chicken marination :
boneless chicken pieces cut in small size- 1 & 1/2 cup
Garam Masala - 1 tsp
Black pepper powder ( Kali Mirch)- 2 pinch
Cumin powder ( zeera)- 1/2 tsp
Coriander powder ( dhaniya ) - 1/2 tsp
Red chilly powder ( Lal Mirch ) - 1 tbsp
Salt ( namak ) - 1/2 tsp + 1/2 tsp or as per taste
Tumeric powder ( haldi ) - 1/2 tsp
Cardamom powder ( ilachi ) - 1/4 tsp
1 cup Dahi ( Curd )
1 tbsp Ginger Garlic paste
( adrak lahsun paste )
3 tbsp fresh pudina ( mint leaves )
3 tbsp fresh Hara dhaniya , kothimir( coriander leaves )
1/2 cup birista ( fried onions )
Black Cardamom ( badi ilachi ) - 2 nos
Mace ( javitri ) - 2 pinch
Green chillies ( Hari Mirch ) - 2 nos
Cinnamon stick ( dalchini ) - 2 small
Black cumin seeds ( shah zeera , kala zeera ) - 2 pinch
for marination sauces :
3 tbsp oil ( tel )
Chopped Garlic ( lahsun ) - 10 to 12 cloves

1 tbsp soy sauce
1 tbsp Tomato ketchup

fried chicken :
10 to 12 Chicken pieces With bone
1/2 egg ( anda )
1/4 cup or 4 tbsp Dahi ( curd )
1/2 tsp or as per taste salt ( namak )
1/2 tbsp red chilly powder ( lal Mirch powder )
1 tbsp curry leaves ( Kari patta )
1/4 tsp Orange red food color
1/4 tsp soy sauce
1/2 tsp Ginger Garlic paste ( Adrak lahsun paste )
2/3 cup Cornflour powder
for boiling rice :
2 cup rice ( Chawal )
8 cup water ( Pani ) for boiling rice
2 tbsp salt ( namak )
1/2 lemon juice ( Nimbu ka Ras )
1 tbsp oil ( tel )
other ingredients :
1 tbsp oil ( tel )
Lemon juice of 1 big size lemon
( Nimbu ka Ras )
1/4 tsp Orange food colour
Mix in 1/2 cup milk
heat oil for chicken frying

Sabse pahle chicken ko marinate karenge. (Marination me use hone wale ingredients uper diye gaye hain). Us hisab se chicken ko marinate karna hai.
ab Ek pan Mein Tel garam Karen. Tel Jab acchi Tarah Se Garam ho jaega To ismein Barik Kata Hua lahsan Dal Dein aur sath hi Barik Kata Hua adrak Dal Dein in dono ko high flame per 30 second ke liye fry Karen. ab ismein Bari Bari se Sare sauces Dal De. aur ise 2 minut Ke Liye high flame per fry karein. last Mein vineger Dal Dein. acchi Tarah Se mix Karke gas ki flame ko off kar dein. aur is mixture ko marinated Chicken mein daal kar acchi Tarah Se mix Karen. Aur ise side mein Rakh De.
ab fry karne Wale chicken ko marinate Karenge. ( chicken fry ke marination ke liye jo ingredients hain Unki list Upar di gai hai.) Us hisab se fry Karne Wale chicken ko bhi marinate kar lein aur side mein Rakh Dein.
ab Ek cooker ya bade se bartan Mein Pani Garam hone ke liye rakh dein. is mein namak Nimbu ka ras aur Tel Daal Dein aur Pani Ko ubal Aane Dein. Jab Pani ubalne lagega is Mein chawal dal Dein. chawal Ko Main pahle hi aadhe ghante ke liye Pani Mein bhigo Kar Rakh Diya Tha. ab insab ko acchi Tarah Se Milayein. aur chawal ko 60% cook Hone Tak pakayein. chawal Jab 60% Tak cook ho jayenge tab uska Pani nithar Lein.
ab Ek cooker ya bartan mein chawal ki patli layer ya Parat Laga Dein. usper 4 tablespoon Garma Garam Tel dal Dein. ab marinated chicken ki layer lagaein. ab uske upar Ek bade se Nimbu ka ras Dal Dein. Uske baad bacche Hue chawal ki layer lagaein. ab dudh Mein Thoda Sa food colour mix Karen aur use chawal ke upar Daal Dein. aap Chaho to Shimla Mirchi Tukdon ko fry Karke bhi upar Dal sakte ho. lid ya dhakkan lagakar gas per Rakh De. pahle 2 se 3 minute ke liye high flame par pakaaye. Uske bad gas ki flame ko low kardein aur 15 se 20 minut ke liye pakaaye.
