*SAMBHAR RECIPE :- *
Ingredients:—- for 10 person
For Masala :-
—3 tbsp oil ,
—1/4 tsp hing,
—1/2 tsp rai ( mustard seeds),
—1 tbsp Udit dal,
—1 tbsp chana dal,
—1 tbsp chawal(rice),
—1/2 tsp Kali mirch( black pepper)
—1 tbs sengdane ( pea nuts)
—1 tsp methi dana, (fenugreek seeds)
—3 tsp akha dhaniya ( coriander seeds)
—15,20 curry patte (curry leaves)
—6,10 akhi lal mirch ( dried red chillies)
—3,4 lahsun ki kali (garlic cloves)
—1 medium piyas( 1 medium size onion)
—1/2 tsp haldi pow
—1 tbsp khircha hoova kachcha nariyal ( grated fresh coconut)
For sambhar :—-
— 1 badha chamach oil ( 3 tbsp )
— 1/2 tsp rai ( mustard seeds)
— 1/2 tsp zira
— 6,7 curry patta ( curry leaves)
— 1 medium chopped tamater,
— 2 and 1/2 tbsp bhigaye hoove toor dal ( soaked 2 and 1/2 tbsp toor dal)
—1/2 tsp haldi
— 1 tsp red chilli powder ( or as taste)
—1 1/2 tsp salt ( or as per taste)
— 3 bade glass garam pani, ( 3, 3 1/2 glass)
—1/2 cup bade tukde kaddu 🎃, kakdi , 1 sengphalli ( pumpkin, cucumber, 1drumsticks)
—100 gram Gud ( jaggery)
— 1 1/2 tbsp imli ka semi thick pulp,(or as per taste)
— 2 tbsp fine chopped coriander ( kotimir)
— homemade sambhar masala( jo humne pehle banaye)
Method:-
3 tbsp toor dal bhigne rakhde 1/2 , 1 ghanta pehle.
Sambhar masala method:- Ek pot ja kadhayi me pehle 3 tbsp oil dale, phir chana dal, Udit dal, chawal,rai dane, Kali mirch dane, sengdane, methi dane, dhaniya dane (coriander seeds) dal Ker bhoonte rahe continue ab kadhi patta, sukhi Lal mirche, lahsun, piyas , haldi pow dal Ker 2,3 seconds bhoone ab nariyal add kere bhoone bhoone bhoonte rahe, flame 🔥 low to medium hona Chahiye 1 minute bhoon le sab or thode pani ke sath mixer me iska paste bana le fine paste….. sambhar homemade masala ready
Sambhar method :- Ab sambhar banane ke liye cooker me , pehle oil dale jab achcha Garam ho jaye, rai, zira, kadhi patta, chopped tamater dal ker achcha naram hone tak pakaye.
Ab sambhar masala dal Ker bhoone thoda phir veggies dale ( kaddu, kadki , sengphalli) phir , haldi , mirchi powder, or toor dal , namak daal Ker bhoone ab garam pani dale phir mix Kerke taste kere.( namak chahe to pehle 1 tsp add kere sirf phir check Kerke or dale) ab Gud dal Ker….
flame medium to high Kerke isko boil aane tak pakaye phir bilkul low flame Kerke dhakkan laga ker sim per 25 to 30 minutes pakne de…
25,30 minutes baad jab cooker ki gyas nikal jaye puri, dhakkan khol ker ahista se halke hath se sambhar ko mix kere taki toor dal mix ho proper… ab imli pulp dale or kotimir dal Ker or 3,4 minute pakaye…. Sambhar ready
