DAHI VADE IN APAM PAN
Ingridents :
Udad dal- 1 1/2 cup.
Moong dal- 1/2 cup.
Methi dana- 1 tsp.
(In sab ko dhokr 6hrs k liye bhigne rakh de).
-Daal pisne k time:
Zira -1 1/2 tsp.
Hari mirch- 4 se 5.
Lehsan kali- 5 se 6.
Thanda pani - zaroorat padne par.
Dahi- 750 gm
Sugar -100 gm ( ya jitna meetha rakhna ho us hisab se dale)
Salt - taste k hisab se
Green chutney,
Khtti mithi khajur imli chutney - garnishing k liye)
Dahi vada masala- garnishing k liye.
*Dahi vada masala recipe* :
ingredient:
Ajwain- 1 tsp.
Zira- 3 tsp.
Red chilly pwdr-3 se 4 tsp.
Kali miri pwdr- 1 tsp.
White salt - 2 tsp.
Black salt- 1tsp.
Chat masala - 2 tsp.
Dahi Vada masala method:
1) ek pan ko hlka garm kare usme zira or ajwain dale or 2 se 3 minut bhune.
2)zira ajwain 3 min bhunne k bad foran powder masale dale or 1 se 2 min tak mix kare. Pura method low flame par hi karna h ta k masala jale ni.
3)Bhunne k bad ise thanda hone de us k bad okhli me dalkr koot le barik koote.
Okhli na ho to belan se bele plain suface pr dalkr.
Masala ready.
*Dahi vada method:*
1) 6 hrs dalo ko bhigne k bad mixi me pees le fine paste bnaye zira,lehsan or hari mirch dalkr. Batter zyada thick b na bnaye or na zyada patla.peeste wqt agar pani ki zaroorat ho to thanda pani dale.
2) peesne k bad batter ko Ek brtnd me nikale jisme wo double hoske waisa bartan le ,bartan me nikalkr hatho ki 4 unglio se batter ko phente jisse hath ki garmi se batter me garmaht ayengi or khameer achha ayenga.aisa karne se batter fluffy hota h.pehtne k bad kisi garm jgh rakh de ta k khameer jldi aye.
3) khameer ane or batter double hojane k bad batter me salt dale taste k hisab se.or hlke hath se mix kare.
4) 10 min batter ko rest dene k bad gas pr apam pan ko greec kr k 1 tblsp jitna batter dale. (Tip- apam pan me vade ko pakne k liye 7 se 8 min lgte h to ek side 4 min or dusre side 3 se 4 min rakhe).
5) pan se nikalne k bad vado ko thnda hone de.
6) ek bartan me pani le or usme Thande hogye vado ko dal de or vado ko bhigne rakhe.isse vade soft bnte hai.
7)jabtak vade bhig rahe ho dahi ka batter bnale.dahi me sugar milakr dahi ko plain hone tak phente.
(Tip- pisi hui sugar b leskte h ta k sugar jldi se mix hojaye or dahi batter b smooth bnta h).
8) vade bhig jane k bad hlka sa press kr k extra pani nikal de or vado ko dahi me dal de.
9) 2 se 3 minut dahi me bhigne k bad vado ko serving plate me dale uspr green chutney, khtti mithi chutney,or dahi vada masala dalkr serv kare.
Barik kati Kothmir ka use b kerskte serv krte wqt.
